Ribeye Stir Fry

Steak for dinner? Oh yea, one of my favorite meals! Add the baked potato, salad, a little glass of wine and there you have a mouth watering, scrumptious evening.
What else could a person ask for? Well, steak once a week would be just wonderful if you ask me. Yes, I like meat, good quality, preferably grass fed if possible.
I know that a good quality ribeye steak for example is loaded with the B vitamins and the minerals zinc and selenium. It’s all good!!!
Now, if I really want to watch my waistline, I’ll skip the sweet potato, maybe. It just all goes together, doesn’t it?
Just wait and see how great you feel after enjoying that charcoaled steak meal. And I like the green lettuce salad best of all with the steak.
A variety is good to combine. Iceberg, romaine, red leaf, a little shredded cabbage, black olives, green olives, garden tomatoes, sliced red onion, and chopped fresh zucchini. And of course your favorite homemade salad dressing. I usually make the vinegar and olive oil.
What I like so much about this particular meal is that it is so easy to prepare. The salad combo of your choice can be prepared earlier in the day. And unless you want a 7 layer chocolate cake, you are good to go.
The charcoaling or oven broiling is easy, especially if you have a “I like to grill person”.
So now the question is, what do I create with left over steak? I have the perfect solution, at least it is something I enjoy.
Ribeye Stir Fry
Ingredients
1 medium sized ribeye steak
1/4 cup olive oil
1/2 cup red pepper, chopped
1/2 cup green pepper,chopped
1/2 cup chopped onion
1 and 1/2 cup broccoli florets
1 cup sliced mushrooms
1 handful of unsalted cashews
1/4 cup soy sauce
1 cup long grain rice
1/2 cup water
1 teaspoon of beef bouillon granules
Dash of granulated garlic powder
Saute the onions and peppers in the olive oil. Add the ribeye bite size pieces and saute’ until browned. Add the broccoli florets,
water, and beef bouillon.
Cook over medium low heat, and add the mushrooms and garlic powder. While continuing to simmer the meat mixture, cook the rice separately in 2 cups of water. Add the soy sauce and cashews to the meat mixture and continue to simmer stirring occasionally, until the rice is done. Serve the stir fry over the steamed rice, and add more soy sauce, if desired.
This is a great quick meal using left over steak. You can’t go wrong with this one! Now I think I am getting hungry again!
